Les Gaudrettes Côtes du Jura

Now retired, Philippe Bornard handed over the keys to his estate to his son Tony in 2017. But this figure from the Jura has left behind many cuvées to discover urgently. Here, the Chardonnay vines located in the commune of Buvilly in the Côtes-du-Jura appellation have their roots in clay-limestone soils on marl. Conducted organically and biodynamically, the berries are harvested by hand, pressed directly, then vinified using indigenous yeasts and without inputs. Aging in barrels continues for a year, giving birth to an intense wine, with a charming nose of candied citrus, white flowers, almond, quince and curry. The palate is dense, fruity and shows great energy, unfolding aromas of citrus fruits, pear and pretty spices. The long mineral finish is persistent and very fresh. Here is a wine accessible today but which can evolve for a few years in the cellar. It will go harmoniously with a pike-perch fillet or Bresse poultry with morels.
