Bianka and Daniel Schmitt’s Wild Pony smells of ripe vineyard peaches, orange zest and honey. On the palate it has a fine acidity, a slight tannin kick and a nice length. Great drinking flow.
As always, grapes are handpicked for 6 weeks Mash contact and of course fermented spontaneously.
The wine matured in used barriques under floor yeast. After that, it was filled with minimal sulfur, unadorned and unfiltered.
You should definitely see Bianka & Daniel’s wild pony carafe, then it goes wonderfully with many hearty dishes. We even recommend opening it a day before drinking, as the wine needs a lot of air when it is young.
